Ghee Roast/Nei Roast and Chutney.

Ghee roast is a tasty and crispy breakfast..And one of my favorite dish i use to make for my husband..This can be served with varieties of chutneys and Sambar… Here we go🤝

Ingredients

For ghee roast

1)Idli Rice -1 cup

2)Urad dal/Uzhunnu parip-3/4 cup

3)Salt-1 tsp

4)Ghee (as rqd)

For chuntney

1) coconut-1 cup

2)Green chilly-3nos

3) curry leaves-1

4)Ginger-small piece

5)cashew nut/Pea nut-5nos

6)Salt-1/2tsp

7) Mustard -1/2 tsp

8)oil-1 tsp

Steps

1)Soak Idli rice and Urad dal in water for 6 hours

2)Add enough water and grind it nicely so as to become a smooth paste

3)Pour it into an air tight container for 8 hours for fermentation

4) When fermented add salt and mix well

5)Heat the dosa tawa,if the heat is high sprinkling some water over the tawa to maintain the heat.

6)Pour one ladle of batter and turn the ladle over the batter in 3 or 4 rounds to get thin crispy dosa

7) Spread ghee on sides and top of the dosa

8)Roast dosa on both sidea till slight brown on low flame

9)Remove onto a serving plate

For chutney

1)Grind ingredients (Coconut,greenchilly,curry leaves,Ginger,nuts) together and add salt to a smooth paste.adding enough water.

2) Transfer them into a bowl

3)Heat oil in a pan.Add mustard seeds when it splutters add small onion,dried chilly,curry leaves..wait for it turns light brown colour

4)pour this into bowl and mix well.
